This tray biryani is nothing but a very simple version of making the delicious biryani which will take your taste buds to the next level.

It has three simple steps, making the delicious gravy and the aromatic rice and we layer it in the tray part in the conventional oven, its done in 20 mins or so each and every rice gets the whole flavor of it.

Here I add all the whole spices and onion tomato ginger garlic and coriander and mint leaves for the exotic flavors Then i add in the marinated chicken , the chicken should be perfectly marinated for 15 mins to half an hour which is added into the biryani and cook the chicken for almost 90% , Its all done then we soak some rice in water and keep some water in a pan and add the extra flavors with a drop of oil when it comes to a boil add in the soaked rice and boil it to 75% and then the last part is that cooking them in the oven with a tray where it is fully made into the delicious and divine layered biryani.

One of my friend she always says “Whenever i make biryani i put the heart and soul into it and i will make the best out of it” . So similarly i did my job here where it came out into an awesome tasty chicken tray biryani and actually i couldn’t wait for my next spoon to have it, it was that pure and delicious you guys too try this and let me know.

Now lets see he full recipe of it ,

Prep Time: 10 mins      Cooking time: 20 min      Serves: 4

Ingredients :

For the gravy part:
  1. Bay leaf – 1 or 2
  2. Cinnamon sticks – 1
  3. Cardamom – 2 to 3
  4. Clove – 3
  5. Javithri – 1
  6. Fennel seeds – 1/2 tsp
  7. Star anise – 2
  8. Whole pepper – 4 to 5
  9. Onion – 2
  10. Green chilly – 2 to 3
  11. Coriander and mint leaves – few
  12.  Grated ginger and garlic – 1/2 tsp
  13. Tomato – 2
  14. Salt – to taste
For marinating the chicken: ( Marinade the chicken for 15 to 20 mins )
  1. Chicken – 1 lb
  2. Curd – 2 tbsp
  3. Red chilly powder – 1 tbsp
  4. Garam masala – 1/2 tbsp
  5. Coriander powder – 1tbsp
  6. Cumin powder – 1/4 tbsp
  7. Chicken 65 masala (totally optional) – 1/4 tsp
  8. Lemon – 1/2
  9. Salt – 1 tbsp
  10. Grated ginger and garlic – 1 tbsp
  11. Turmeric powder – 1/2 tsp
  12. Oil – 1/2 tsp
For the Rice: (Wash and Soak the rice for about 10 to 15 mins)
  1. Rice – 3 1/2 cups
  2. Water to soak and boil – As req
  3. Salt – 1 tbsp
  4. Lemon juice – 1/4
  5. Oil – 3 to 4 drops
  6. Coriander and mint leaves – few
  7. Green chilly – 1/2
Extra taste making ingredient :
  1. Fried onions – 1 cup For layering in tray

Notes : (Before starting the recipe)

  • Firstly marinade the chicken
  • Soak the rice
  • Keep the tray ready and well greased with butter or ghee or oil

Preparation :

  • Take a pan add some oil
  • Add the whole spices to it
  • Add the onions and the green chillies saute well
  • Add the tomatoes and give it a good mix until the tomatoes are well mashed
  • When the tomatoes are well mashed ass shown add in the marinated chicken with some salt
  • Add some water for it to cook well
  • Add some lime juice to it and taste and adjust accordingly
  • Put the lid on and cook
  • The chicken should be 90% cooked and the rest will be cooked in the conventional oven in the tray process
  • When the chicken is done the gravy part is over Next to the rice part
  • Take another pan and add some water to cook the rice
  • Add some lemon juice, green chilly, salt , coriander and mint leaves and few drops of oil for the rice to not get sticky
  • When the water is roll boiling add the soaked rice in it
  • The rice should be cooked to 75% and the rest will be done in the oven
  • As shown it break when we mash them in our finger
  • Then strain it in a colander and keep it aside
  • Now lets see the tray part
 TRAY PART : (Before stating this preheat the oven to 325 degree Celsius)
  • First take the greased tray and add in the gravy and save some for the next layer
  • Then add one part of the rice and add the toppings such as the fried onions and coriander and mint leaves
  • Then add rice and the rest of the gravy and top it with the same
  • Then finally add the rice and some saffron soaked water and some turmeric water for the colorful rice and a restaurant look
  • Top it with some ghee just a hint of it
  • Then finally top it with the fried onions and the coriander and mint leaves
  • Close the tray with aluminium foil and seal it well so that the aroma locks inside
  • Then keep the tray in the pre heated oven and cook it for 20 min and then wm it for 10 mins
  • When i did this it was so very well perfectly done all done
  • Biryani is all ready
