Vadacurry..!! a Famous South Indian Recipe!

When you go down the south of India there will be no hotels without this recipe which is called the VADACURRY. This is a very famous recipe in the places of Tamilnadu like chennai and trichy and chettinad too.

Am going to show the recipe of  trichy version, where we make small cute bondas or vada’s and then we make a raw paste or gravy kind, out of some ingredients like roasted gram, coconut and few whole garam masalas then we boil them with some sauted onions and tomatoes then when it has come to a roll boil add the vada’s into it and garnish it with some curry leaves and coriander leaves.

This awesome Vadacurry goes well with idly, dosa, poori and parotta or else you can just have it like that with some finely chopped onions on top just like thayir vada or sambhar vada, Now lets see the full recipe of it.

Prep Time: 15 min      Cooking time: 15 min     Serves: 4

Ingredients :

To make the vada’s : (Before you start doing just wash & soak all the below dal’s in water for 1 1/2 hrs )

  1. Urad dal – a handfull
  2. Toor dal – a handfull
  3. Channa dal – a handfull
  4. Moong dal – a handfull
  5. Salt – 1/2 tsp

To make the paste to grind :

  1. Roasted gram/potukadalai – 1 tbsp
  2. Coconut powder – 2 tbsp
  3. Cashew broken – 1 1/2 tbsp
  4. Ginger – small piece
  5. Garlic – 3 cloves
  6. Cinnamon – 1
  7. Fennel seeds – 1 tbsp
  8. Star anise – 1
  9. Red chilly – 3 or 4
  10. Salt – 1/2 tsp

To make the gravy :

  1. Bay leaf – 2
  2. Onion – 1/2
  3. Tomato – 1/2
  4. Sugar – a pinch
  5. Salt – to taste
  6. Water – little
  7. Curry leaf – 1 sprig
  8. Coriander leaves – few

Preparation :

To make the Bonda’s or vada’s :

  • Just take all the dal’s as said above wash it and soak it in water for 1 1/2 hours
  • Grind it into a paste which is neither coarse nor paste
  • Take a pan add some oil
  • When it is hot enough add the batter little by little with your hands as shown
  • Keep it in a medium hot flame just to make it well cooked inside too
  • When it is golden brown take it out in a colander
  • Likewise do it for the rest of the batter too
  • And keep them aside
  • And if you don’t wish to deep fry them you can always steam cook them too for a healthy recipe
  • But i prefer deep frying since it tasted awesome

To make the paste :

  • Add all the ingredients into the blender just raw and grind it into a watery paste
  • keep it aside

To Make the gravy :

  • Take a pan smear some oil
  • Add onions saute a bit
  • Add tomatoes saute well until raw flavor is all gone
  • Add a pinch of sugar to caramelize the tomato and cook faster
  • Add some water allow it to boil well
  • Add some curry leaves
  • Since i didn’t have it i have added some curry leaf powder
  • When it comes to a boil add the ground paste
  • Stir well and roll boil it for 10 minutes
  • Time to add the fried bonda’s/vada’s into the gravy and lets do it
  • Garnish it with some coriander leaves
  • Stir well and close it with a lid
  • Switch off the flame and leave it as it is for about 20 minutes or so
  • So that it will be well soaked in the gravy and gives the mouth-melting vadacurry
  • Done it is all ready to platter our awesome famous Vadacurry!!!!

Tip: Always you can some more water and slight boil when your reheating or when it has gone too thick!

Have it with awesome crispy dosa, poori, idly or parotta
