YUMMMM!!! Stuffed Bell Peppers

Preparation time: 10 min       Cooking time: 20 min        Serves: 2

Ingredients:

  1. Capsicum / Bell peppers – 1 (cut into two halves and deseed them)
  2. Mozzarella cheese – 2 slices and some chopped/grated
  3. Chopped & boiled potatoes – 1
  4. Onion finely chopped – 1
  5. Tomato finely chopped – 1
  6. Garlic – 1 clove finely chopped
  7. Green chilly finely chopped – 1/2 tsp
  8. Parsley / Coriander leaves – few
  9. Red chilli flakes – 1/2 tsp
  10. Ketchup – 1/2 tbsp
  11. Paneer (if you have you can add that too) – 1 cup grated
  12. Salt to taste

Tip: Texture of the cut and boiled potato texture is very important in this recipe

Preparation:

  • Initially cut the raw potato and boil them with some salt
  • Take a wide pan smear some oil
  • Add onions and saute them well until transparent
  • Add the garlic and green chilly too saute a bit
  • Add the tomatoes in and cook them until mashed
  • Add the potatoes in the pan (“Texture” )
  • Add the dried parsley or coriander leaves
  • And some red chilly flakes
  • Check the salt before adding ketchup and cheese
  • Because some cheese contains salt in it stir well until it melts
  • If your adding paneer this is the time go ahead and add it (Without paneer also it tastes great!)

Stuffing:

  • Take the capsicum and cut it into two halves
  • Deseed it and keep them ready
  • When the stuff is cooled down a little bit its time to stuff inside the capsicum cups
  • Place the cheese on top (if  your making for kids go with extra cheese)

Baking :

  • Take a baking pan and grease it with some butter or oil
  • Place the stuffed capsicum into it
  • Sprinkle some herbs like parsley or oregano or red chilly flakes
  • Bake them for 200 degree celsius in the oven for about 20 minutes.

Tawa Preparation:

  • We can make this in a tawa too
  • Just the same and after the stuffing part
  • Add the cheese and keep them in a well oil/butter coated tawa
  • Just allow it to cook for 10 to 15 min closed
  • The perfect time when the cheese melts around and the skin of the capsicum should be lightly soft and crunchy
  • It will be the same as the baked one and done!!

Have it HOT HOT it just melts in your mouth 😉
