POOSANIKAI/winter melon Halwa

Ingredients:

  1. Grated Poosanikai/ winter melon/white pumpkin – 1/4 piece
  2. Sugar – 2 cups
  3. salt a pinch
  4. Cashew – 4 or 5
  5. Ghee – 4 tbsp
  6. Food color – 2 pinches
  7. Cardamom powder – 1/4 tbsp
  8. Water extracted from winter melon

Preparation:

  • Add 1/2 tbsp ghee and fry the cashews and keep it aside
  • Lightly squeeze the grated melon and save that water for later purpose
  • Put the squeezed melon into the cooking pot saute it for 2 min

  • Add the squeezed water to it and cook it closed for about 20 mins in a low-medium flame
  • When the raw flavor is all gone add the sugar accordingly to your taste as needed
  • Add the food color
  • Saute it in b/w add desired amount of ghee
  • When it is not sticking to the pan and glazed it is all done and ready to serve.
