Vegetable kurma

Ingredients:

  1. Bay leaf – 1
  2. Cinnamon sticks – 1
  3. Cardamom – 2
  4. Clove – 2/3
  5. Fennel seeds – 1 tsp
  6. Onion – 1
  7. Tomato – 1/2
  8. Carrot – 1/2
  9. Peas – 1/2 a cup
  10. Beans – 4 or 5
  11. Ginger grated – 1/2 tsp
  12.  Garlic grated – 1/2 tsp
  13. Coriander powder – 1 tbsp
  14. Red chilli powder – 1 tbsp
  15. Turmeric powder – 1/2 tsp
  16. Cumin powder – 1/2 tbsp
  17. Egg masala powder – 1/2 tsp
  18. water as needed
  19. salt to taste
  20. Oil for seasoning

For the paste:

  1. coconut powder – 1 cup
  2. Cashew nut – 3
  3. Roasted gram/pottu kadalai – 1 tbsp
  4. Kasakasa / Poppy seeds – 1/2 tbsp
  5. Green chilly – 1/2 Just to taste

Preparation:

  • Keep oil for seasoning and add the whole garam masalas
  • Add the onion and saute it
  • After that add in the grated ginger and garlic to it
  • Then add the spice powders and saute it

  • Add the tomatoes and give it a mix
  • When the tomatoes are well mashed add the boiled veggies
  • If you want you can add potatoes too
  • Mean while add all the paste ingredients to the blender and make it into a fine paste
  • And then add it into the gravy and mix well
  • Give it a boil and switch off the flame and add few drops of lemon totally optional
  • And garnish it with some coriander leaves
  • The tasty vegetable gravy is ready
  • Have it with roti, parotta, dosa or rice it goes really well with roti and parotta.
